express lane sushiConveyor belt style sushi restaurants, or Kaiten sushi as it is commonly know in Japan has been around for a while now and restaurants are trying different ways to deliver cheap and fresh sushi in new and innovative ways.  Parent company Kappa Create has just opened Sushi NoVa in Tokyo with a new approach.  Instead of the conventional slow conveyor belt that circles around sushi chefs, this new approach uses just one straight express lane in the middle of the restaurant.  The sushi chefs are behind the scene and the sushi order shoots out from behind the wall.

However, an alternative would be to replace that slow conveyor belt motor to a high performance after market model to speed up the delivery.
